April 06 Frustration x100So, here I am again with a new challenge. I'm so frustrated I could scream. My good leg now has a problem that requires me to stay off it for 4-6 weeks. I tried crutches, but that just didn't work. So now I'm in a wheelchair. I just want a week where everything goes well, where I can concentrate on my weight loss. Well, it's just 4-6 weeks. It will be over in a flash, right? March 24 DuracellWe need to recharge our excitement batteries..!! We've been at a status quo for a couple weeks now. It's time to push forward. March 13 ChallengesI'm having challenges. I'm stuck. I know what's causing it, but it's frustrating. I'm stressed out at work. I'm working long hours. I need to work out more. I'm tired. I have a shoulder and elbow injury I'm trying to fix. And the list keeps going. I wish I could go on vacation for about six months and focus only on weight loss. Now there's a great fantasy. I haven't given up. I just need to re-focus. March 03 We're Back....It was a crazy month and an even more crazy last week of February. I was traveling and busy with seminars and all kinds of stuff. But now I'm back and hopefully on track. I didn't lose any weight over the last couple of weeks, but I didn't gain. Tht's the best part. Tim did well too. He was able to take off a couple pounds he put back on. Yea, Tim..!! February 22 This week and nextIt's been a difficult week for eating. For some reason I've been uncontrollably hungry. I've been making okay choices for snacks and my weight has stayed the same, but I just don't understand why I'm so hungry. It makes me nervous. Next week I'm headed off to Albuquerque, NM for 3 days of software training. I'm a bit worried about that too. I need to just keep moving forward. February 18 Day OffIt's nice having the day off from work. I'm getting my workout done without even going to the gym. Cooking, cleaning, running errands . . . and it's only 11 a.m...!! What a work out. This just proves to me it's time to retire. February 15 Finally.....Tim and I are finally starting to feel human again. This virus really knocked us both out. It was really difficult making the right food choice. I was too tired to cook anything and really just wanted to take the easy way out. Now that we're feeling better we can get back on track. February 11 Cool BookI just purchased this cool book -- "Eat This, Not That" by David Zinczenko. In the first part of the book, the author takes you to different restaurants and shows you the healthful alternative to some foods you might enjoy. For instance, instead of eating an In N Out Double Double the way it comes, if you order it protein style (wrapped in lettuce w/ketchup and mustard) you save about 300 calories. It really helped me make some wise choices over the weekend.
Speaking of fast food, have you seen the new Fresco style tacos and burritos at Taco Bell? A little high in sodium, but way low in calories. February 08 Ugh..!!Well folks, it's my turn to be sick. UGGHH..!! Not only is it difficult to eat, but to eat the right things. I don't feel like cooking and I'm afraid to pick up prepared foods (not fast food). So, we'll see in a few days how things are going. February 05 Too Sick to Weigh InPoor Tim. He's way sick today. He has the flu. So he won't be weighing in today. I'll add his weight and our combined total when he's feeling better. I, on the other hand, weighed myself and lost .5 lbs. February 04 We Made It Home In One PieceWell, we made it. We went to Leadership and survived. The event was spectacular (but that's another blog entry). Anyway, I had this plan in my head of how to control our eating over the long weekend. It didn't exactly gel the way I expected it to. Timing was a big issue. There was just not enough time to plan and get all our meals in. There was no time to eat at home Thurs. evening, so we had to "grab" a bite at the airport. I chose a turkey sandwich and Tim and I split it along with a bottle of water. We got in late, so we went right to bed. Friday was a free day. We got a very late start for food. We were starving. We ended up at a dive for what was supposed to be breakfast, but ended up being lunch. Waiting that long to eat was a big mistake. Our choices weren't as bad as they could have been, but ..... ya know what I mean?! So after breakfast/lunch, we headed back to our hotel. I don't remember what we ate the rest of the day, but when evening hit, we decided to have a couple "drinks." Mmmmm. Lemon drop (martini) for me and a Bloody Mary for Tim (2 ea.). YIKES..!! I sure did sleep well. January 31 Winter LeadershipWell, we're off to our winter Leadership Convention. We'll be in the Bay area for three days. I worry about making poor choices due to time limitations. We're usually rushed for breakfast, there is no lunch break and then dinner we go out with our group. I'm packing plenty of "better" snacks than we might pick up while there. I have 100 Calorie Snacks, our protein bars and energy drinks. I've been self-talking (is that the same as talking to myself? January 29 The Gym...Here's a cute email I received today.

For my birthday this year, my daughter (the dear) purchased a week of personal training at the local health club for me. Easy DinnerI took a small (2 lb) pork tip roast and covered it with a mixture of chopped garlic (enough to cover), a tbsp of lemon juice, 1/2 tsp cumin and a tsp of lemon pepper. Placed it in a small roasting pan with 1/2 cup of chicken broth and roasted it @ 425 degrees for about about 1-1/2 hrs. (155 degrees) My home spelled like a garlic factory. MmmMmmMmm. A 1/4 cup of rice and a load of veggies made for a really yummy dinner. January 28 WooHoo for TimTim did it again. His employer brought food in today (as he does everyday) from some place called Tito's. I guess burritos and tacos are their specialty. But instead of the two burritos, a big pile of chips and salsa, rice and beans (w/cheese) and loads of guacamole, he ate only one burrito, skipped the chips, had a small portion of rice and beans and some guacamole. That's way down from the norm. I'm sooooo proud of him. Let's all give Tim a great big high-five.
January 26 Impromptu DinnerI didn't know what I was going to make for dinner last night. So I just started pulling things from the fridge and cupboard.
8 oz. chicken breast
1/2 cup salsa
1/4 chicken broth*
1 bag frozen broccoli
1 can peas*
2 roma tomatoes
1 red bell pepper
2 heaping tbsp tomato paste*
black pepper to taste
garlic powder to taste
onion powder to taste
*Most all of my canned goods are low sodium or no salt added ('nsa").
I cut up the chicken into bite-size pieces, seasoned with pepper, garlic powder and onion powder (Mrs. Dash works well too). While the chicken was browning, I chopped the tomatoes and red pepper. I added the chicken broth and broccoli and simmered for a few minutes. I added everything else, put a lid on it and let simmer for 15 mins. Much to my surprise, this tasted really good. Plus, it had so much bulk it was very filling.
January 24 Difficult DayTuesday was a very difficult day for me. I was as stressed out as I could be. After having Monday off for MLK day, I needed to take Tuesday off, unexpectedly, due to a dental emergency for my dad. That, coupled with many other personal and business-related issues, made for a bad day. Anyway, all those stresses left me ambivalent about my working at weight loss. There were countless numbers of times where I found myself saying "who cares about weight loss," "what good is this going to do," "it really doesn't matter." Things of this nature. But on this day, what I did differently was really answer those questions. "Who cares about weight loss?" "I DO..!!" "What good is this going to do?" "PLENTY...!" "It really doesn't matter." "OH, YES IT DOES..!!" It was a constant battle throughout the day, but in the end, I won. Don't get me wrong, it wasn't a perfect day. I didn't get in enough water. I missed snacks. My lunch portion was too big. But . . . but . . . I didn't eat the bad things I wanted to eat. I recovered and life miraculously didn't come to a screeching halt. I CAN DO THIS..!! January 20 Atta Team..!!
I'm giving Tim and me a great big pat on our collective backs. I think we're doing pretty well. Exercise is difficult, but the food part is coming right along. If I haven't already mentioned, I have exercise issues. I have some health challenges that make it very difficult to exercise. I do the best I can -- like today's basketball challenge. I couldn't run well, so I walked most of the time, but I did it -- I moved my butt up and down the court. We are losing at a nice consistent pace. We encourage each other when it gets tough and boy I know there are tough times ahead.

January 16 Recipe - Marinara/Meat SauceHere's an easy recipe:
Marinara/Meat Sauce 1 medium onion finely chopped 4-6 medium tomatoes chopped (or a 14.5 oz can a diced tomatoes)** 1 green pepper chopped (more or less to taste) 6-8 garlic cloves finely chopped (you can never have too much garlic..!!) 1 tbsp Italian seasoning (if you don't have Italian seasoning, you can make it by combining some or all of: oregano, parsley, sage, thyme, rosemary, marjoram, basil) 1/8 teaspoon black pepper (more or less to taste) 1 (8 oz) can tomato paste** 1-2 teaspoons Splenda 1 lb lean ground turkey, chicken or beef* (optional) Brown ground meat (if using). In a separate pan, saute veggies w/just a bit a olive oil or cooking spray. When onions become opaque, add the tomato paste, seasonings and Splenda. Simmer 5 minutes. Add meat and simmer another 5 minutes. If it seems too thick you can thin it with some water or chicken/beef stock (low sodium, is best). *Meat is optional. It depends on what you're going for **When possible, I like to use "no salt" canned tomatoes This is all done according to taste. Add a little something here and a little something there. Whatever suits your taste. The idea is to use ingredients without lots of preservatives, salt, oil, etc. January 15 DRINK...DRINK...DRINK...!!!
Quote DRINK...DRINK...DRINK...!!! January 14 DinnerSo tonight I tried something different. I went to Trader Joe's and purchased, among other things, uncured roast beef (2 oz = 80 cals.). I loaded lettuce into a bowl, chopped up 3ish oz of roast beef, one hard boiled egg white, chopped some green onions and tomatoes and topped with very low cal. Kraft Italian dressing (25 cals. for ea. 2 tbsp). Tim seemed to enjoy this. It may be a bit high in sodium, but it's still way less than Tim would normally eat. I used the roast beef and made myself some romaine lettuce wraps topped with yellow mustard. Perfect for me. Breakfast @ Carrow'sYesterday I felt like going out for breakfast. Tim was a bit worried that he would want his usual big breakfast with lots of meats and hash browns w/cheese and onions not to mention all the other stuff that comes with it. But instead we ordered 3 poached eggs, 2 slices of dry wheat toast and a side of fruit. We ate it and survived..!!
(Side note from Tim: We were thinking of going to Denny's instead of Carrow's. But Denny's is the only place in the world where I can get my "Ultimate Omelet". Since I don't ordinarily get a chance to have my "Ultimate Omelet", that's usually what I order when I do go to Denny's. I knew that, if we went to Denny's, it wasn't going to be the 3 poached eggs I'd be ordering. Hence...we decided to go to Carrow's.) January 12 What we've been eatingThis past week has been pretty good foodwise. We both seem to be maintaining without too much trouble. First thing every morning I pack our food for the day. For Tim I pack a bag with one protein bar, one small cup of diced peaches (sweetened w/Splenda) and two energy drinks (only 8 cals. ea.) He eats his lunch at the office from the food provided by his employer. This week he has been making pretty good choices. For me, I pack a piece of chicken, fresh broccoli and carrots. I keep a supply of protein bars, protein pudding and energy drinks at my office for snacks. We start out in the morning with a 1.3 oz cup of Cheerios or similar cereal with some non-fat milk. We don't have a lot of time for me to prepare any protein so we save that for after we get to work. We have our snacks during the day and then when I get home I start dinner. Dinner has been consisting of some sort of protein (chicken, lean ground beef, ground turkey), steamed veggies and a salad with low fat or fat free dressing. Later in the evening we may eat celery w/peanutbutter, if we need a snack. On the weekend, we treat ourselves to a 6" Subway turkey sandwich. Boy does that taste good. This seems to be working for now. I need to start getting creative so we don't get bored. Will share the recipes that work. Ahhhhh, Much BetterToday is starting out to be a much better day than yesterday. We got to sleep in. Hooray..!! |
